We have tacos in our house at least once a week. My kids love them. I love them, mostly because of how easy they are to make. There are so many ways to change up tacos. Heck on plenty of taco days I am just cleaning out the fridge. Yesterday I made ground beef taco meat with finely chopped broccoli in it. No one knew the difference.
I love having a few dishes that you make weekly, things like tacos, pizza, breakfast for dinner, or casserole night. This helps a ton with meal planning. You just don’t have to reinvent the wheel every week. It also helps a bunch with picky, fussy eating. When kids know what to expect things just go easier with eating dinner.
To make taco night healthier we use things other than a flour tortilla for serving. We love romaine lettuce, Siete tortillas , or corn tortillas.
Simple Sheet Pan Dinners
If you have been around our blog for any amount of time you know I love a good sheet pan. Look, I am all for an easy crockpot dinner, but for me nothing is easier than a sheet pan. Just grab everything and throw it on a pan and into the oven. Everything in this picture was cooked on one pan! Can you believe that? I even lined it with parchment paper, so cleanup really was a breeze.
Here are all my tips and tricks on how to cook with a sheet pan:

Healthy Chipotle Sheet Pan Taco Recipe:
1 can of chipotle peppers in adobo sauce
2 T honey
1 lb of chicken breast tenders
1 bag of cauliflower rice
2 bell peppers
How to Make It:
Preheat the oven to 400. Line a sheet pan with parchment paper.
Open the peppers and remove them from the can. Pour the remaining sauce in a bowl and mix with honey.
Coat the chicken with the sauce, and lay on one side of the sheet pan, not touching.
Wash and cut the bell pepper.
Lay out the bell pepper and cauliflower rice on one side of the pan. Drizzle with avocado oil and sprinkle with salt.
Cook for 20 minutes.
Warm up tortillas and serve.
Chicken breast tenders are just chicken breasts cut into tender sized pieces. They cook way faster and more evenly. My grocery store sells their natural chicken breasts this way. You can also just cut your chicken breasts to this size.
Chipotle peppers in adobo sauce are generally sold in a 7 ounce can.
